one pan mushroom Asiago chicken smells and tastes so good! Use any type mushroom you like.
1. Cut chicken breasts into cutlets. Lightly season on both sides with salt & pepper and dredge in flour, shaking off excess.
2. In a large skillet over medium-high heat, melt 2 Tablespoons butter. Add as many cutlets as will fit but don't overcrowd. Saute until golden brown and cooked through. Place on separate plate and cover lightly with foil. Continue with the rest of the cutlets.
3. Add remaining butter to skillet along with mushrooms and 1/2 tsp. salt. Cook about 10 minutes, stirring occasionally until golden brown and softened. Add garlic & cook another 2 minutes.
4. Pour wine (or 1/2 cup chicken broth) into the skillet and stir to scrape up anything that is sticking. Once the wine has nearly all evaporated, add 3/4 cup chicken broth and thyme. Bring the mixture to a boil, reduce heat to medium and cook 10-15 minutes at a rapid simmer until liquid is reduced by half.
5. Reduce heat to medium-low and stir in heavy cream. Sprinkle the Asiago cheese over the top of the sauce and stir constantly until the cheese melts. Nestle the chicken back into the skillet and allow it to simmer in the sauce until heated through again. Sprinkle with a bit of Parmesan cheese and serve over pasta or mashed potatoes or rice.
Be careful with your heat. Better to be lower than higher so as not to burn.
