Suggest a better description1. Preheat a 4-quart pot over medium heat. Add the olive oil, onion, and a pinch of salt, and sauté until the onion is softened and translucent, about 5minutes. 2. Add the mushrooms, carrot, and zucchini, and sauté until the vegetables are slightly softened and some of the moisture has been released, about 5 minutes. Mix in the garlic and sauté for 1 to 2 minutes. 3. Add the celery, tomato, barley, and broth, and season with salt and pepper. Cover and bring the liquid to a boil. Once it’s boiling, reduce the heat to low. Stir in 2 tablespoons of the rosemary and 2 tablespoons of the thyme, and return the lid to the pot. 4. Simmer until the barley is tender, about 10 minutes. Taste the soup and season again with salt and pepper as desired. For best results, let the soup sit, covered, for at least 10 minutes so the flavors can blend. 5. Serve the soup garnished with the remaining tablespoons of rosemary and thyme.
