1. Place the barley and 1 1/2 cups of water in large saucepan or Dutch oven. Bring to a boil, cover, and simmer until barley is tender (20-30 minutes).
2. Meanwhile, melt butter in a skillet. Add onions and saute for about 5 minutes over medium heat (until clear). Add garlic, mushrooms, and 1/2 teaspoon of salt. Cover and cook, stirring occasionally until everything is very tender (10-12 minutes). Stir in soy sauce and sherry.
3. Add barley with 4 cups of water. Grind in generous amounts of pepper. Simmer, partially covered on low heat.
Awesome if cooked a day ahead too!
