1) Melt oil/butter in skillet over medium heat. Add mushrooms, Herbamare and saute until tender.
2) Stir in flour and mix well to combine. Add in stock and stir to thicken. Let simmer 5 mins.
3) Just before serving, whisk in almond milk or cream.
