Can substitute pork chop or Italian sausage for veal chop
Cut veal into bite-size pieces. Sautee in oil, and add chopped garlic and salt + pepper. Cook for about 5-10 minutes until medium rare, then set meat aside. Sautee “holy trinity” of vegetables (onion, peppers, and celery). Drain mushrooms and slice into bite-size strips. Add mushrooms when vegetables are half-way cooked. Add sauce and meat, then cover and let simmer for about 1-2 hours. Serve with parmesan cheese and Italian bread, or serve over spaghetti.
