-Marinate the mushrooms and keep aside for at least 10 minutes.
-Cook the mushrooms in a pan on high flame. They should be 3/4 th cooked.
-Prepare the masala : Heat a pan, add butter, cumin seeds, bay leaf, onion. When the onions are translucent, add ginger garlic paste and cook for a minute. Now add green chilies, red chili powder, turmeric powder and garam masala. Add chopped tomatoes, cashew nuts (broken into small pieces), 1 cup water, salt and mix well. Cook it for about 10 -12 min.
-Switch off the flame, and allow it cool down. Now grind it to a soft paste. Remove the bay leaf before grinding.
-Heat the oil in a pan and the ground masala. Add some water and cook for 10 - 12 min.
-Once the oil oozes out, add the fried mushrooms and mix them well for another 2 -3 min.
-Garnish with coriander leaves.
