Preheat over to 400. Roll puff pastry out to 16 by 10 inch rectangle. Trim uneven edges. Place pastry on baking sheet. With sharp knife lightly score dough to form 1 inch border. Using fork, prick dough incide the border every 1/2 inch. Back until golden, about 15 minutes.
Meanwhile, toss onion with 1 T oil. Season with salt. Cover and cook over medium heat until brown, about 5 minutes. Stir. Continue cooking with the over on for 15 minutes. Set aside.
Heat remaining oil. Add mushrooms; cover and cook until tender about 10 minutes. Fold in spinach; season with salt and pepper. cover and cook until wilted, about 5 minutes more. Drain any liquid.
Top the dough with the mushroom mixture. Scatter the onions and goat cheese on top. Bake until cheese is browned, about 15 minutes.
