Prepare Uncle Ben’s according to pkg. directions for 2 boxes, using chicken broth and 1/4 cup water to make full quantity of liquid needed.
While rice is cooking, break sausage into small pieces and sauté until brown. Remove from pan reserving as much of the sausage drippings in pan as possible. Drain sausage on paper towels, getting as much fat out as possible.
Chop mushrooms into + - ½ “ dice, add butter or margarine to sausage drippings, add mushrooms and sauté until tender. Drain liquid from pan.
In a large Dutch oven or mixing bowl, combine cooked rice, can of cream of mushroom soup (straight from the can) cooked sausage and cooked mushrooms. Add salt and pepper to taste. (Be careful when adding seasonings, sausage is peppery and chicken broth is salty.) Turn into a large casserole dish and bake in a 350 degree oven for approx. 15 minutes +- until bubbly.
Remove and serve. Goes well with Chicken , Turkey and Ham.
