Heat the oil in a pan and gently fry the onion until soft, about 5 minutes. Add the garlic and cook for a further minute. Add the remaining ingredients except the mushrooms and simmer for 30 minutes. Add the mushrooms and a little water if necessary then cook for a further 15 minutes. Remove the bouquet garni before serving.
