Mushrooms done the right way.
Mushrooms are full of water and need to be sweat out before any other ingredients are added. This is KEY!
Wash, dry and slice mushrooms. Heat in a saute pan on medium heat until they sizzle. Continue cooking and moving around in the pan until the mushrooms release the water and water is cooked off. As soon as that happens add the butter and thin sliced garlic. The butter will melt fast and garlic will start to cook. Add salt and pepper. Cook until garlic is getting golden. Add the wine to deglaze the pan to finish. You can serve now or let them stand off the heat without a cover and reheat on high right before you serve over a bitchen steak!
