Simmer mussels in white wine for 2-4 minutes or until they open. Mix bread crumbs, EVOO, oregano, mint, parsley, s&p. Let mussels cool, remove empty shell from the mussel, place on sheet pan, covered in coarse sea salt. Spoon mixture into mussel, broil 2-3 minutes.
