Heat a large cast iron skillet over high heat.
Add the mussels, spread them out evenly, and drizzle the olive oil over them. Scatter the garlic and parsley on top. Scoop the mussels together, using two spatulas, and turn. Pour the white wine over the mussels. Cover for about 1 minute if the mussels as tiny or several minutes if they are larger.
The mussels are done once they are open. discar any unopened mussels. Serve immediately.
