By the time the mustard greens have cooked for 45 minutes, any "sting" is gone and they're tender and silky. If you don't have two bunches of mustard greens, you can use one bunch chard and one bunch mustard greens.
1. Wash the greens and chop them, but don't dry them.
2. Prepare the rest of the ingredients (cooking goes quickly).
3. Heat the oil in a wide, heavy pot over medium heat. Add the onion, rice, ginger, cumin, and paprika. Stir to coat with the oil. Cook for 2 minutes, then add the cilantro and greens. Sprinkle with sea salt, cover the pan, and cook until the volume has reduced, 10-15 minutes.
4. Give everything a stir, and then reduce the heat to low, re-cover, and cook slowly for 40 minutes. There should be ample moisture in the pot, but check once or twice to make sure that nothing is sticking on the bottom. If the pan seems dry, add a few tablespoons of water.
Serve the greens over the steamed rice with yogurt or lemon wedges on the side
12/2010 cooked with half mizuna for greens, leek (intead of onion), and arborio rice in skillet. needed to add water during cooking because water didn't really stay on greens and I didn't close the lid for 20 minutes or so; should try putting cilantro (and other greens like mizuna) in near the end; went really well with baked chicken that has meat & poulty seasoning.
