Suggest a better description1. Heat oil - add onion, peppers, & celery. Add 2 tbsp butterCook over med heat 5-8 mins to soften
2. Move veg to one side and add sausage and cook on separate side until sweated. (5-8 mins).
3. Add garlic, Cajun seasoning, and stir.
4. Add tomatoes, broth, & filé.
5. Simmer on lie to reduce to nice sauce.
6. If using chicken, brown in oil before adding veggies. If using shrimp, add before serving and cook until pink.
7. Serve over steamed rice. Out hot sauce on table for those wanting more kick.
