Melt butter over medium heat in a large pot
Cook onions and carrots until slightly soft, about 5-6 minutes
Increase heat to high, add sherry and stir until alcohol evaporates, about 2 minutes
Stir in chicken broth, half and half, carrots and broccoli, and all the spices Bring to a boil, then reduce heat and simmer for 15 minutes
Mix together milk and cornstarch, slowly add to pot, stirring constantly for 3 minutes
Reduce heat to low and add cheeses.
Simmer for 10 minutes, stirring occasionally.
