This sweet bread has all of my favorite things - bananas, nuts, coconut and chocolate chips! Adapt as you like to make it your own.
Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.
Cream softened butter and sugar until fluffy. Place bananas in a one-cup measure and add enough applesauce to make one cup. Add to creamed butter-sugar mixture. Stir in eggs until well combined. Add flour and baking soda; mix just until combined. Gently stir in nuts, 1/2 cup coconut and chocolate chips. Top with remaining coconut.
Bake for 30 minutes. Check for doneness with a toothpick inserted into the center. Most likely it needs more time in the oven. When the top is lightly browned, cover with foil. Continue baking, checking at 5-7 minute intervals until the toothpick comes out clean. Baking time varies depending on the ratio of bananas to applesauce, and sometimes it takes nearly an hour.
Change the amounts of nuts, coconut and chocolate chips depending on your tastes.
