1 put potatoes, onions , celery, and carrots in a large dutch oven with enough water to cover potatoes and boil on med / high until almost fork tender about 25 minutes
2 add butter, and milk bring back to boil and stir to mix
3 Turn down to low and add velveeta, salt, and pepper stir lightly until cheese melts about 10 minutes
4 enjoy with a grilled ham & cheese sandwich
the secret to this is make sure you stir when you add the cheese
