Quick and easy. This is a go to recipe for all my family! It is spicy, but so good!!
Heat oven to 350. Spray a 9x13in pan and set aside. In small sauce pan, heat cream of chicken soup
with velveeta till cheese is melted. Combine this with all other ingredients, except 1 1/2 cups of the shredded cheddar and the tortilla chips. Pour into prepared pan, cover and bake about 1 hour, until heated through and rice is tender. Remove cover and top with remaining shredded cheddar and broken tortilla chips. Bake another 10 minutes to melt cheese. Serve with sour cream if you like.
