2.5 hours before -
-Turn on grill to 300 degrees
-Prep toppings while grill heats up
1 - 1.5 hours before -
-Make fresh guacamole, cut avocados, scoop into a bowl, add lime and spring onion then mash with clean hands and gloves, cover and store in fridge
-Grill beef mince, beans and corn until cooked breaking up thoroughly
-Only put 5kg of beef mince at a time, split the beans and corn accordingly to cook in batches for larger groups
-Place in a tray once cooked and put into a dry oven at 90 degrees
