For Crepes:
1. Place all ingredients in a blender and mix at high speed. Chill 2 hours
2. Heat pan and lightly oil
3. When hot, pour 1/4 cup batter, roll back and forth to spread thinly.
For Spinach mushroom filling:
1. Slice and saute mushrooms in butter
2. melt butter over medium heat and stir in flour, cook slowly, stirring constantly.
3. Remove from heat and whisk in milk and seasoning.
4. Increase heat and return to heat and boil for 1 min.
5. Stir in cream and all but 2 tbsp cheese.
6. Reduce and simmer for 2-3 min
7. Combine 3-4 tbsp sauce with spinach and mushrooms
Use remaining sauce to pour over once filling is inside crepes.
For Cottage cheese filling.
1. Mix all together and put in crepes.
Once crepes have fillings, cook at *425 F for 20 min.
