Pre-heat oven to 350 degrees F.
Cut chicken into 10-12 pieces (split breast), and place in a large roasting pan. Add onions, parsley and celery to pan. Place in oven and cook until chicken is about half-way cooked (30-45 minutes). Stir 3-4 times during cooking.
Add mushrooms, crushed tomatoes, banana peppers (whole), oregano, bay leaf, salt, black pepper, wine and red pepper flakes to pan. Stir real good.
Continue cooking, without lid, stirring every 10-15 minutes, until chicken is done (no longer pink inside), about (about 45-60 minutes). Near the end of cooking, taste and adjust seasoning as desired.
