1. Prep: Everything will go directly into the instantpot.
Dice all veggies( Carrots, Onion, Celery, Garlic).
Set the instantpot to saute, pour in all veggies in with extra virgin olive oil. Let veggies saute for 10 mins.
2. When saute is complete, pour in the chick broth, Chicken thighs (leave whole), water (Don't go over 3/4 of the pot), sugar, salt, peppercorns, and boullion cubes. Set the pot to manual (Medium-High) for 25 mins.
3. As the magic begins, prepare the dumplings. Stir the flour, baking powder, sugar, and salt into a bowl.
Cut in butter until crumbly. Stir in milk until soft. Milk- use until desired level. (I don't like mine to stick. Normally do over 1/2 cup.)
4. When the instant pot is done cooking, remove the top. Scoop out the chicken and shred it on a cutting board. The chicken will fall apart using a fork. Pour the chicken back into and stir to mix throughout.
5. Scoop the dumplings into soup and set the instant pot to saute for 10 mins. Cover the soup. The dumplings will not w/o the pot going back to a boil. When dumplings are puffy, the soup is complete. Let it cool before serving.
6. Pro tip: Clean up the entire kitchen when the instant pot is cooking. Only remaining items to clean up will be the bowl for the dumplings, spoons, and the instant pot bowl.
