Firstly, switch the oven to gas mark 3 (160°C/325°F)
cream together the sugar and butter till its pale and fluffy. Next, add eggs, one at a time, mixing between each one.
Sift flour, baking powder and mixed spice into the mixing bowl and stir in well. Add the mixed fruit and mix well with a wooden spoon (do not mix in a food processor after adding the fruit because it mashes up the fruit to a paste)
Lastly, pour into a cake tin lined with greaseproof paper and bake for 2 hours.
After 2 hours, test the cake by inserting a clean knife through the middle. If it comes out clean, the cake is done. Allow the cake to cool in the tin before turning it out onto a cooking rake.
