Place fruit in a bowl with the water or orange juice and liqueur. Cover with cling wrap and let stand for 2 days.
When the fruit is plump place in a saucepan with any remaining liquid. Add butter, condensed milk, vanilla, marmalade, jam and spices.
Bring to the boil, stirring occasionally. Reduce heat and simmer for 5 minutes. Remove from heat and leave to cool.
When the mixture is cool fold in the dry ingredients.
Transfer to a large square or round baking tin ( 23 x 23 cm).
Bake at 160 degrees C for 2 1/2 hours.
Cover the top of the cake with foil stop it from browning too much.
