This stuff always works, and it doesn't have the overpowering olive oil taste.
Take 1/4 cup of the water and let the yeast bloom in it. Place the flour into a bowl. add the salt, and honey. Add half the water about a quarter cup at a time while incorporating the ingredients together. Add the bloomed yeast and continue mixing. Keep add the rest of the water until the dough is tough, try not to make the dough wet and sticky. Once it becomes a dough put the ball into a mixer with a dough hook. Knead for at least 40 minutes. The dough should be able to be pulled into very thin sheets like a balloon so it might take an hour.
Let rise till double (1 hr?). Punch down and let rest for 10 minutes. Form into pizzas. You can bake the dough for a few minutes before putting the good stuff on if you like it crispier. Bake off after putting the good stuff on.
Need to figure out how to make without cool machine.
