Combine beans, ham, bay leaf, peppercorns, whole cloves, and 8 cups of water in soup pot. Bring to a boil then simmer for about 2 1/2 hours. Remove ham hocks/bone and place on cutting board. Add vegetables to pot and cook for an additional 30 minutes. When cool, remove and dice ham meat and return to the pot. Remove bay leaves, peppercorns, and cloves. Season with salt and pepper to taste. Serve hot.
