A refreshingly tasty salsa to use as a side dish or sauce with meat.
For the Harissa paste:
In a heavy based dry frypan, roast the cumin seeds till brown. Grind them.
Mix all of the harrissa ingredients and grind them together into a paste.
Store in a sealed jar in the fridge.
For the salad:
De-stone and dice the nectarines into 5cm pieces.
Chop the tomato into 5cm pieces.
Peel and finely dice the red onion.
Shred the mint, basil and corriander leaves.
De-seed and finely chop the chilli.
If it is an accompianment to other dishes that are spicy hot, leave out the harissa paste.
Mix all the ingredients together in a bowl and serve.
Fresh ingredients and well ripened tomato and nectarines make the best version.
