Core the apple using an apple corer
Mix together the cinnamon, sugar. Place a half cinnamon stick in the centre of the apple.
Place the apple on tray with grease proof paper on the bottom
Dust with more brown sugar
Make sure the apple can stand up and the oven is hot.
Bake in oven at 180 for 20 minutes.
Or until the apple is soft, hot yet still holds its shape.
Remove and place in a warm place. do not touch them!
Place a pan on the stove on a high heat. add the white sugar and leave it to turn to caramel.
Stir with the motion of the pan not with a spoon. Add a nob of butter and wait till combined. it may froth up.
When the sugar is hot, dark brown not black, add some thick cream . this will froth up. remain on heat and whisk till combined.
and reduced by a third.
For LF. Replace the cream with Almond milk and add a tbsp of maple syrup. use the same method.
This recipe will take time as it is done by eye to make the sauce thick and nice.
Cool and it will thicken.
Omit the mascarpone for the LF and VG also. Add some more fruits for decoration.
Mascarpone Cream with vanilla.
Sugar, Mascarpone and vanilla seeds. mix till combined.
