Mix the dill and shallots and a little oil and completely cover the salmon fillets Leave Over night.
Cook the salmon fillets in a 180c oven for 15-20 minutes (ovens differ so oven times will vary)
While the salmon is cooking, fry the diced red pepper in a little olive oil for 5 mins.
To serve, place a Spoon full of the rice just off centre on the plate.
Place the salmon fillet resting off the Rice
Drizzle a little chive beurre blanc around the plate
Sprinkle over some of the red pepper for colour and garnish.
