Make Vegan use panko breadcrumbs
Fry all the ingredients in a frying pan until soft and translucent.
Salt and pepper. Make sure all are cooked and tender.
Add your chopped herbs and taste to season.
Now add the mashed potato and mix well to form a thick mix.
Shape into your chosen shape and place into the fridge to cool and stiffen.
After heat oil to 180'C or a frying pan with a drizzle of oil at the bottom.
Dip each one in flour , then a egg/milk beaten mix them your chosen bread crumbs.
Cook each one off till golden and keep warm in the oven.
