Leaving the pork roast whole, fat included, brown the pork roast on all sides in olive oil, use medium-high heat. Add roast to crock pot. On top of roast, combine everything else. Set crock on to 6 hours on low. 45 minutes prior to serving, shred pork using forks, should fall apart. Add salt and pepper to taste, serve with tortillas.
