Preheat oven to 400 degrees Fahrenheit.
In a large ziplock bag, crush crackers with a rolling pin until crumbs are fine with no big pieces.
Melt butter in a microwaveable liquid measuring cup on med power to keep butter from separating, check butter every 10 seconds and set aside when melted.
Cut the Haddock fillet in half to make 2 fillets. Season with salt and pepper on both sides.
Pour a small amount of butter in a 8x8 or 8x10 baking dish to lightly coat the bottom of the pan, place Haddock fillets side by side in pan.
Mix the cracker crumbs in a medium mixing bowl with the Parmesan cheese and parsley until combined well. Pour half the remaining butter into the crumb mixture and mix well until all the crumbs are coated evenly.
Spread crumb mixture gently and evenly over the tops and edges of the haddock fillets. Drizzle any remaining butter over the crumb mixture.
Place in center of oven and bake for 15 - 17 minutes until golden brown and bubbly around the edges.
Remove from oven and serve with a lemon wedge.
Don't over think it. Adjust the cheese to suit your taste. Use less crumb topping and omit the final drizzle of butter if you want a lighter dish. I love it and I don't use lemon on mine. But it's still great either way.
