My Grandpa's Clam Chowder Recipe
Fry the bacon until crisp. Drain on paper towels and reserver. Fry the onions in the bacon fat for five minutes until softened. Add the potatoes. Add the clam juice. Cover and simmer for 15 minutes until the potatoes are almost tender. Add the cream and heat to simmering point. Add the clams and the water in which they are packed. Cook only until hot. Do not continue cooking or the clams will become tough. Garnish with parsley. Divde between the soup pots and season with freshly ground black pepper.
