New England Clam Chowder
Pick through clams and discard any with cracked shells. In a large, lidded pot, heat clams and 1½ cups water over high heat.
Once water comes to a simmer, cover with lid and steam until clams just pop open, about 4 minutes.
Remove pan from heat. Shuck clams and discard shells. Discard any clams that don’t open. Set clam meat aside.
Discard any drippings and wipe pot clean.
Add potatoes, cream, milk and a pinch of salt, and bring to a simmer over medium-high heat. Reduce heat to medium and simmer until potatoes are fork-tender, about 10 minutes.
Meanwhile, in a small saucepan, heat olive oil over medium heat.
Once hot, add shallots and cook, stirring frequently, until lightly caramelized, about 7 minutes.
Stir shallots into potato-cream mixture and simmer until flavors meld, 2 minutes.
Add reserved clams.
Season with salt, pepper and lemon juice to taste, and simmer until clams are just warmed through, about 1 minute.
Remove soup from heat and stir in parsley and dill.
Serve immediately.
