A classic style New England Clam Chowder. Delicious but very easy.
Drain canned clams being sure to save the juice which should give you about 2 cops of juice, set both aside. Place sliced bacon in a heavy 4 quart or bigger pot and cook over medium heat until cooked and starting to brown. Add chopped onion and continue to stir until Onion is soft and clear.
Take reserved canned clam juice and add the bottled clam juice to it and it should be around 3 cups (If not add water to make 3 cups.). Add clam juice to bacon and onion in the pot and increase heat to med-high. Add half the cut potatoes and simmer just until potatoes are soft, stir often so potatoes don't stick (About 12 minutes).
Reduce heat to med-low and add the can of cream of celery soup, heavy cream, butter and potato flakes and stir until all are well dissolved and incorporated, let cook about 10 minutes until well heated again.
Add thyme and remainder of chopped potatoes and cook just until new potatoes are soft (About 10-15 minutes). Stir in the chopped clams when there is 5 minutes left. Cool soup and let sit for at least an hour before serving, just reheat and serve. Like any soup letting it sit for a few hours or better overnight always lets the flavor blend better and results in a much better tasting soup.
You can also use fresh in the shell clams if you wish Just make sure you steam them first and reserve the juice, in that case you may not need the bottled clam juice in order to make 3 cups. The reason for adding the chopped potatoes at two different times is most of the first potatoes you add will basically dissolve and help thicken the chowder, you can also help a little by smashing some of the first potatoes on the side of the pot to help break them up if you want. If you don't have potato flakes or just wish to you can substitute a tablespoon or two of flour instead to help thicken the chowder.
