1. Put potatoes in a colander and rinse with cold water for about 1 minute
2. Put potatoes in a pot with a steamer basket STEAM them about 25 minutes,
until they are tender
3.Meanwhile, heat remaining ingredients until butter melts, keep warm
4.Drain steamer and put potatoes back in pan, without steamer basket, over low heat to dry them completely
5.Using whisk beater on stand mixer, break potatoes up on low speed
6. Add liquid in a steady stream until mixed
7. Whip on high until light and fluffy
The secret is steaming and then drying potatoes so they are not water soaked. Also the rinse gets rid of starch sso they don't get "gummy"
