Pastry
Combine flour, sugar, assorted peels in large bowl. Cut in butter until texture of course crumbs. Stir in egg yolk & vanilla to form soft dough. Chill for at least one hour. Let dough do same.
Preheat oven to 400 degrees. Roll out pastry on floured board to l/8 inch thick. Cut out 9 inch circle, Refrigerate trimmings. Place circle of dough over bottom of greased 9 inch springform pan. If pastry too soft to roll, refrigerate longer or pat half over bottom of pan with fingers . Bake pastry until golden, about 20 minutes. Let cool on wire rack.
Filling
To prepare filling, beat cream cheese with sugar, flour, peels & vanĂlla in large bowl of electric mixer. Add egg & yolks, one at a time , beating thoroughly after each addition, the filling that is. Stir in the cream!
Increase oven temperature to 550 degrees or highest temperature of oven.
Grease sides of springform pan. Roll out reserved pastry trimmings and cut into strips 2 inches wide. Pat the strips into place against the sides of the pan, pressing an edge into the bottom crust. Fill immediately with the cream cheese mixture. Bake for 12 minutes.
Reduce oven temperature to 200 degrees. Bake for one hour.
Let the cake cool on wire rack.
Refrigerate for at least two hours before serving.
