This is one of my favorite cheesecakes. You can take this and stir in lots of different candies or cookies, or make it as-in and top with fruit. The original, plain recipe is Tim's favorite way for me to make it!
PREHEAT OVEN TO 325.
FOR CRUST:
Mix all ingredients together and press onto the bottom of a 9" springform pan. Bake for 10 minutes.
FOR FILLING:
Beat cream cheese, sugar, flour and vanilla at medium speed until well blended. Add the eggs, one at a time, mixing on low after each addition, just until blended. Stir in sour cream and pour over crust. Bake 65-70 minutes, until the center is almost set. When finished baking, turn oven off and leave the pie in the oven with the door ajar for one hour. After cooling in the oven for an hour, take the pie out and run a knife around the edge. Refrigerate for 4 hours before serving.
To help prevent cracking, line the OUTSIDE of the springform pan with heavy duty foil. Place the springform pan in a pan large enough to sit level. Pour boiling water in the large pan about a quarter of the way up. Then you can bake the pie for 65-70 minutes. I have a large glass lasagne pan that my springform pan sits down in. The steam from the water helps keep the pie from cracking in the middle.
*** VARIATIONS ***
Use chocolate graham cracker crumbs, or smash up any cookies to use as crust or to stir into the pie. I've also stirred in Heath Bar, chocolate chips, Oreos, etc. You can also add peanut butter by doing the following:
Bake your crust as directed. While that's baking, take about a half cup of regular creamy peanut butter and melt it. When the crust is done baking, pour the melted peanut butter over it and let it cool. Then you can add your filling on top of this -- it's SO GOOD!
