For the dough;
1. Bloom the yeast in a stand mixer bowl with a tsp of sugar and 1/4 cup warm water. (5-10 minutes)
2. Add the rest of the ingredients and mix until the dough is just a little sticky. If it's very sticky, add more flour. Do this until a smooth ball forms.
3. Divide dough into four parts, roll each part into a smooth ball.
4. Put each ball in its own large bowl that's been well coated with olive oil.
5. Age in the fridge for at least 24 hours. Up to a week.
For the sauce:
1. Remove tomatoes from the caning liquid and discard the liquid.
2. Squash or blend the tomatoes until smooth.
3. Add remaining ingredients and mix until smooth.
Assembly:
1. Place the pizza stone into the oven on the middle rack and heat the oven to its maximum temperature. Once at maximum temperature, keep heating for another hour. Use convection setting, if available.
2. After the oven has been heated, stretch pizza dough and place on a well dusted peel (stone ground while wheat flour, cornmeal or such).
3. Top with sauce, dust with parmesan and then top with mozzarella.
4. Bake for 5-6 minutes.
5. Rest on cooling rack before slicing.
