This pasta started as a quickly thrown together dish, but after completion reminded me of Nigeria because of the use (only) one big chilli.
Fry the chilli and garlic.
Add the tomatoes (destemmed, and roughly chopped, can leave the skin on).
Add the basil and chopped black olives, pepper and salt. Let simmer for 30 minutes until most water has cooked off
Brown the chicken in a separate frying pan. Once brown, add to pasta sauce.
Prepare pasta, drain, and add to pasta sauce.
Service in pan on the table.
Make sure you have plenty of water and white wine.
