In a med-heavy saucepan bring ingredients #1-6 to a boil. Turn down a little and simmer until a candy thermometer reaches the soft ball stage. Remove from heat.
Stir in oats and vanilla, mix well.
Drop by tablespoonfuls onto waxed paper.
Let cool completely.
Store in airtight container in cool dry place.
