Love a big layered cake? Here is a mini version which makes the perfect personal size cake. All you do is layer chocolate wafer cookies with whipped cream and chill. The cream soaks into the cookies, creating a delicious, soft, cake-like texture. A perfect kids sleepover activity.
WHIP CREAM: On high speed, beat heavy cream, sugar, and vanilla until soft peaks form.
ASSEMBLE CAKES: Dividing equally, spread whipped cream (about 2tsp. each) over all the chocolate wafer cookies. For each cake, stack 4 cookies.
CHILL & SERVE: Place cakes in cupcake liners or on a plate and refrigerate 4 hours or overnight. The cookies will soften into a cake-like consistency. When ready to serve, garnish with sprinkles.
Change up the sprinkles to suit the holiday or occasion.
