Whisk cream cheese, 1 Tbsp milk, and Cool Whip until smooth
In a separate bowl, mix 2 boxes of Jell-o Instant Pudding and milk with an electric hand mixer for about a minute. Add Pumpkin and pumpkin pie spice. Mix until well incorporated.
Add a small layer of Cool Whip/cream cheese mixture on bottom of pie shell
Add Pumpkin mixture
Top with remaining Cool Whip mixture
Cover and refrigerate several hours or overnight. Serve chilled.
