1. Preheat oven to 375 degrees. Spray lasagna pan with Pam. Or make in two 8x8 pans. Line one with aluminum foil to freeze and cook later.

2. Do not drain. Make a double batch of ATK Quick Tomato Sauce. (puree the tomato sauce first for the kids) or use jarred sauce.
3. In a medium bowl, beat eggs. Stir in ricotta, 2 cups of mozzarella, Parmesan, basil and Italian seasoning
a. Spread 1 cup of sauce on bottom of baking pan.
b. Layer pasta sheets, 1/3 of ricotta mixture, half of browned meat and mushrooms, 1 cup of mozzarella, and 1 cup of sauce.
c. Layer pasta sheets, 1/3 of ricotta mixture, and 1.5 cups of sauce.
d. Layer pasta sheets, the remaining ricotta mixture and browned meat and mushrooms, and 1 cup of sauce.
e. Layer pasta sheets, the remaining 1.5 cups of sauce, and remaining 1 cup of mozzarella
5. Bake, covered with foil until bubbly, 50-60 minutes. Uncover and continue cooking until cheese is melted, about 5 minutes. Let stand 15 minutes before cutting.
