Beat sugar and butter on low speed. Stir in vanilla and egg. Stir in flour and baking soda.
Shape dough by spoon into balls. Place 2 inches apart on ungreased sheet. Flatten with bottom of glass dipped into sugar.
Bake 9-11 min.
