Place starter, warm water, bread flour, salt and sugar in Kitchen-aid with bread hook. Knead with hook for 10-15 minutes, until elastic.
Turn bread onto floured surface, knead a few times by hand, then transfer to oiled bowl.
Place bowl in oven with light on for two hours.
Remove dough, punch down, then replace in oven for another hour.
Remove dough, separate into two equal rounds and place on baking sheets. Replace these sheets in oven and allow the dough to rise for 30 minutes.
Brush loaves with an egg white.
Bake at 375 for 20-30 minutes.
Can add more water/ flour to make the dough the right consistency. No everyone's starter is at the same hydration level.
