This was Dad's favorite dessert (and mine too!)
Preheat oven to 350. Prepare water bath (see below)
Grease sides and bottom of 8" round cake pan (use the 10" size ingredients and 10" pan for a larger cake)
Line with parchment paper and grease again.
Melt chocolate, butter, and sugar in bowl over boiling water until just melted; Cool
Whip eggs very lightly in seperate bowl for 1 minute
Add cooled chocolate mixture and mix until well combined
Add in flour and liquor if using and combine
Pour into cake pan and place in water bath (water should be boiling and come 1/2 way up side of cake pan)
Bake about 25 minutes (28 minutes for 10" size) or until edge is set and center is jiggly. Note that different times are required depending on temperature outside, humidity, etc.. Know that it will continue to bake after you remove it from the oven.
Cool completely before removing from the pan. This is when I make the ganache. I usually cool the cake in the fridge for several hours so it's nice and cold.
To prepare ganache: Boil cream in double boiler. Add chocolate. Wait a few minutes and then stir.
Cut around cake and turn onto plate and tap hard to loosen.
Cover the cake with the ganache. It looks better if ganached upside down.
*Strong family debate exists on whether this tastes better served at room temperature or cold. Dad preferred room temp. I prefer cold. What's your vote?
