Place liquid ingredients in the bottom of the bread machine and flour on top. Set setting to 9 to mix dough. Lightly flour the dough, wrap in wax paper and refrigerator overnight. Do not knead dough with flour – it will become too tough.
When dough is mixed, **cut into small sections to roll 1 section at a time (keep remaining dough wrapped). Roll dough rather thin onto a lightly floured surface. Cut into 2” strips. Cut 2” squares. Place filling in center. Fold corner-to-corner forming a triangle. Pinch edges together to seal. Pinch two corners together to form tortellini. Lay formed tortellini out in a single layer onto waxed paper, cover, freeze, then bag when frozen.
Raviolli: use ravioli form/press kit
**If using a pasta machine – use setting 1 for initial rolling, set to 2 – roll again, set to 3 – roll again, set to 4 – roll again, set to 5 – roll for the last time. (Raviolis – go to setting 4 only, 5 is too thin)
Sauté onion and celery in small amount of vegetable oil. Add ground beef and cook until meat is browned. Drain grease and set aside. Place beef mixture into food process or chopper and ground until it is a fine consistency. Add Parmesan cheese, parsley, egg, salt, and pepper & drained spinach(Refrigerate until ready to stuff pasta)
(makes approximately 200 tortellini’s)
Bring chicken soup broth (tortellini) or water (ravioli) to a rolling boil. Place tortellini/ravioli carefully into liquid. Boil approximately 15 minutes, or until al dente.
If using canned soup: (1) can soup per person
