Drain spinach well making sure there is little to no water. Mix all ingredients together in a large bowl. Check consistency, you don't want it too dry. You want it moist but not watery, add another egg if you need to. Spray baking pan with PAM cooking spray. Form mixture into balls just smaller than a tennis ball and place into pan so they are not touching. Bake at 350 degrees until browned, about 30 to 45 min. ( you can also use this same recipe to make a meat loaf, stuffed pasta shells with sauce, stuffed bell peppers, filling for cabbage rolls with sauce. Use your imagination. ) Also if you like you can substitute cooked chopped eggplant instead of the spinach.
