This is a family favorite that we make year round. A chicken stock and cilantro base keeps it on the healther side. Serve with salsa, shreadded cheeses, sour cream, and Fritos corn chips.
In a large stock pan, saute onion, celery, garlic and chicken in small amount of oil over medium-low heat. Add salt and pepper to taste. Cook until chicken is done. Add approximately 2 cups of the chicken broth and set aside the remaining amount. Add all remaining ingredients and bring to a boil. Reduce heat and simmer 20 minutes to an hour adding the leftover chicken broth as needed to your liking.
Serve hot with toppings of shredded cheese, a dollop of sour cream, salsa, and sprinkle of Fritos corn chips.
I add some dried red pepper flakes when i feel like it. It just depends on who I am making it for. I simmer abount 20 minutes, but I really like it if I can let it simmer on low heat for about an hour. Just make sure to check on it once in awhile to make sure it has not cooked down too much. When that happens you can add more water or chicken broth. I also don't add much salt, if any, because my family will eat tons of Fritos. Enjoy!!
